Mexican Corn Casserole -mary lou page

4 eggs
1 can 15-1/4 oz whole kernel corn, drained
1 can 14-3/4 oz cream-style corn
1-1/2 cups cornmeal
1-1/4 cups buttermilk

1 cup butter or margarine melted
2 cans (4 oz each) chopped green chilies
2 medium onions, chopped
1 teaspoon baking soda
3 cups (12 oz) shredded cheddar cheese, divided
Jalapeno pepper and sweet red peppers rings, optional


Beat Eggs in large bowl; add the next 8 ingredients and mix well.
Stir in 2 cups cheese.
Pour into greased 13" x 9" x 2" baking dish.
Bake uncovered at 325 for 1 hour.
Top with remaining cheese.
Let stand for 15 min before serving.
Garnish with peppers if desired
Yield 12-15 servings

 

Sweet and Sour Green Beans -penny evans

3 to 4 cans whole green beans or equivalent amount of fresh

2 Tbl sugar
2 Tbl Red wine vinegar
4 pieces of bacon
1 medium onion

Cook beans and season to your taste, drain and keep warm.
Sauce:
Cook bacon and crumble - save grease.
To the grease add sliced onion cook until soft, then add
sugar and carmelize.
Then add vingar stir well.
Place beans on serving plate and pour sauce over them.

 

Banana Bread -marva vanmeter

1 cup melted oleo
2 cups sugar
4 eggs
2 tsp.Vanilla  
1tsp.Almond extract
1 cup Mashed Bananas          

4 cups Flour
2 tsp. baking Power
1 tsp. soda
Dash of salt
1 can (20 oz) Crushed pineapple
 1 1/2cups Coconut
Nuts ( optional)

Cream oleo, sugar, eggs, vanilla, almond extract and Bananas
Combine flour, baking powder, soda, salt and add to creamed mixture.
Add the pineapple and coconut
Bake at 350 degrees
Large Loaf takes 45 minutes to 1 hour

 

Summer Sausage- jerry evans

3 lbs pork or turkey or beef
2 Tbl Tender Quick salt
1 tsp peppercorns  
1 tsp mustard seed

1 tsp onion powder
1 tsp garlic powder
1 tsp liquid smoke

Mix all ingredients well.  Cover tightly and refrigerate over night.  Cook 1 hr in 400 deg oven or until shrunk and dry. 

 

Bread Pudding- from Paula Deen

2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 tsp vanilla extract
3 cups cubed bread (Italian) stale overnight in a bowl
½ cup packed brown sugar
¼ cup (1/2 stick) softened butter
1 cup chopped pecans

Sauce:
1 cup granulated sugar
½ cup melted butter
1 beaten egg
2 tsp. vanilla
Optional: 1/4 cup brandy or less


Oven preheated to 350 degrees F.  Greased 13 x 9 x 2 inch pan
Mix sugar, eggs, milk, vanilla. Pour over bread and let set 10 minutes.  In another bowl mix and crumble brown sugar, butter and pecans.  Pour bread into pan, sprinkle brown sugar mixture over the top and bake 35-45 min or until set.  Remove from oven.

For sauce mix sugar, butter, egg, and vanilla in a saucepan over medium heat.  Stir together until sugar is melted. 
Add brandy and stir well.  Pour over bread pudding and serve warm or cold
